064 Dice Tomatoes:  Chef Marc, Parma Restaurant Las Vegas, Wears Three Hats

He’s known as one of the best Italian Chefs in Vegas.  His Parma Restaurant is packed with regulars and visitors who have made his name synonymous with mouth watering creations using only the best fresh-from-the-field ingredients and always using hand made fresh pasta.

So he decides to bring in his crew in the middle of the night to make pasta so its ready to be offered and sold fresh at the major Las Vegas Farmers Markets.  Papardelli, Rigatoni, Linguini, Fusilli…you name it, Chef Marc makes it.

What’s next you ask?  Now he’s created a pizza oven that’s well, it’s no ordinary wood burning oven.  Called ‘Novecento’, for the 900 degree temperature it produces, he’s had it custom mounted on a beautiful black trailer pulled by a color coordinated black Novecento truck.

Now Las Vegas residents and visitors can have the same authentic Napolina Pizza that served in his restaurant.  It bakes in about 90 seconds and the oven can be set up at just about any venue in the valley.

Chef Marc doesn’t deliver pizza…he brings the pizza oven to whereever a great pizza is needed.

Amazing.

We caught up with Chef Marc at the re-opening of the Bet On The Farm Farmers Market at the Las Vegas Springs Preserve on Thursday, December 1, 2011.
